Calamari Pasta Salad Recipe from Damhuis: Recipes and Memories of a House – Serves 6
- 1 packet vermicelli rice noodles
- ½ cup soy sauce
- ½ cup sweet chilli sauce
- ¼ cup finely chopped mint
- 500g raw calamari strips
- 2 tsp fish spice
- 1 tsp paprika
- 1 tsp ground black pepper
- 2 tbsp cooking oil
Cook the noodles according to the packet instructions. Drain and immediately stir the soy sauce, sweet chilli sauce and chopped mint through the pasta.
Mix the calamari with the fish spice, paprika and black pepper. In a pan, heat the oil until it is smoking. Fry the calamari for 3-5 minutes. Remove the cooked calamari and add to the noodles. Mix through and garnish with extra mint leaves.
